Keema & Rice

Ingredients
- 600g lean beef mince raw
- 280g rice raw
- 280g Greek yoghurt
- 1 tomato tin
- Salad of choice
- 1 cup Peas
- 10g Kerrygold butter
2 tsp of each spice:
- Garam masala
- Cumin powder
- Cumin seeds (for rice)
- Coriander powder
- Salt and pepper
- Chilli powder
- Dash of Tumeric

Method
Cook the Aromatics: Start by heating some butter in a pot. Chop your onion, garlic, and ginger, then add the onions to the pot first. Cook until they become soft and golden brown, then add the garlic and ginger. Cook for another minute until fragrant.
Make the Curry Base: Add the canned tomatoes to the pot and stir in the spices: garam masala, cumin powder, coriander powder, turmeric, chili powder, salt, and pepper. Let it simmer for a few minutes to meld the flavors together.
Cook the Meat: Add your meat (chicken, turkey, or lean beef) into the pot with the sauce and mix to coat it well. Add some water to adjust the consistency of the curry and leave it to cook until the meat is fully cooked and tender, around 15-20 minutes.
Prepare the Rice: While the curry is cooking, rinse the rice well. In a separate pot, add the rice, along with chili flakes, salt, pepper, and cumin seeds. Cook according to the package instructions.
Finish the Curry & Rice: When the curry is nearly done, stir in frozen peas and fresh coriander for added flavor. Once everything is cooked, serve the curry over the rice.
Garnish & Serve: Top the curry and rice with a dollop of Greek yogurt, then garnish with chopped cucumber, tomatoes, red onion, and extra coriander. Add salt and pepper to taste and enjoy this flavorful, high-protein meal!
