Biryani-Style Chicken & Potato

Ingredients

  • 175g chicken breast (or thigh – tastier also haha)
  • 250g potato
  • 30g Greek yogurt (or more / less depending how saucy you like it)
  • Veggies of choice
  • coriander
  • Biryani seasoning
  • little oil & water to make it juicy!

Method

  1. Boil the Eggs: Place the eggs in a pot of water and boil for 10-12 minutes until fully cooked. Once done, peel the shells and set the eggs aside.

  2. Toast the Bread: Toast your bread slice until golden and crispy.

  3. Prepare the Avocado: Slice up half of the avocado and set aside.

  4. Assemble the Toast: Spread a layer of cottage cheese on the toasted bread. Top with sliced avocado, and season with salt and pepper.

  5. Grate the Eggs & Finish: Grate the boiled eggs over the avocado and cottage cheese mixture. Sprinkle some chili flakes on top for an added kick.
