Eggs on Toast

Ingredients

  • 1 sourdough bread (I use Jason’s Sourdough)
  • 2 eggs
  • 100g cottage cheese
  • 75g avocado
  • Salt, Pepper, Chill flakes

Method

  1. Boil the Eggs: Place the eggs in a pot of water and boil for 10-12 minutes until fully cooked. Once done, peel the shells and set the eggs aside.

  2. Toast the Bread: Toast your bread slice until golden and crispy.

  3. Prepare the Avocado: Slice up half of the avocado and set aside.

  4. Assemble the Toast: Spread a layer of cottage cheese on the toasted bread. Top with sliced avocado, and season with salt and pepper.

  5. Grate the Eggs & Finish: Grate the boiled eggs over the avocado and cottage cheese mixture. Sprinkle some chili flakes on top for an added kick.
