Kafta Wraps

Makes 8 wraps

Ingredients

  • 1 lb ground lean beef
  • Restaurant style tortillas
  • 1 yellow or white onion
  • Parsley
  • Cilantro
  • Garlic
  • Yogurt
  • Lemon
  • Tahini
  • Green Onion
  • Optional Toppings: Middle Eastern Pickles, Tomatoes
  • Spices: salt, pepper, baharat seasoning,cumin, coriander, cayenne

Method

  1. Marinate the beef with 1/2 of the onion (shredded and drained), 1/8 cup chopped parsley, 2 tsp baharat seasoning, 1/2 tsp salt,1/4 tsp black pepper, 1/2 tsp cumin, 1/2 tsp coriander, 1/4 tsp cayenne.
  2. Once mixed, split the mixture into four quarters. Each quarter should then be split into halves and distributed thinly onto two tortillas.
  3. Place meat facing down onto a hot pan or griddle and cook for 3-4 mins.
  4. For the sauce: In a blender, combine 1 clove of garlic, 1 green onion, 3 tbsp yogurt, 1/2 tsp tahini, handful of cilantro, handful of parsley, juice of half a lemon, and a pinch of salt. You can adjust the measurements according to your desired taste.
  5. Top the kafta wraps with pickles, tomatoes, and your green sauce. Can also have a salad on the side for more volume. Enjoy!
